RICE FLOUR

One of the most sought-after flours, in particular by celiacs due to the fact of being one of the gluten-free flours , is rice flour, a flour that is obtained very simply by grinding a cereal that is rice.

Unfortunately, as much as it is a good flour from a nutritional point of view and as much as it is a good product for some types of use, it has a rather big problem which is the very poor ability to rise , caused by the low protein percentage; in fact, remember that if wheat or barley can be kneaded and these rise it is thanks to gluten.

Rice, not having it and not even having similar proteins, as well as corn or buckwheat , is not suitable for leavening and this severely limits its uses.
