Xanthan gum is a common food additive used to thicken foods and beverages. It is also used as a thickener in ketchup, salad dressings, ice cream and toothpaste.

It is produced from glucose produced by fermenting sucrose or glucose syrup with a specific strain of bacteria as described above. Most commercial xanthan gums are made by reacting these bacterial extracts with an alkaline base. The resulting polysaccharide solution is heated until it evaporates into fibers which are then filtered and dried.
